Brainstorming how to integrate Rothwell Distillery’s former sheep-herding heritage, we looked at recipes for roast lamb for inspiration for botanicals. What resulted is Shepherd’s Run, a savory and peppery gin packed with Mediterranean flavours like rosemary, thyme and lemon. Salt bush and bush mint tie the heritage back to Australia, and round out the gin with a light salinity.
