Ingredients
- 45ml Rothwell Distillery Jumbuck Gin
- 1–2 tsp Fresh Finger Lime (or 10ml finger lime juice)
- 20ml Fresh Lemon Juice
- 15ml Sugar Syrup
- 1tbsp Egg White (or aquafaba alternative)
- 2 dashes Angostura Bitters
- Soda Water to top (small splash)
- Ice
Method
- Add Jumbuck Gin, finger lime, lemon juice, sugar syrup and egg white to a shaker.
- Dry shake (no ice) to create foam.
- Add ice and shake again until chilled.
- Strain into a chilled coupe or rocks glass.
- Add a small splash of soda water to lift the foam.
