Pepper Lime Sour — Recipe

Ingredients

  • 45ml Rothwell Distillery Jumbuck Gin
  • 1–2 tsp Fresh Finger Lime (or 10ml finger lime juice)
  • 20ml Fresh Lemon Juice
  • 15ml Sugar Syrup
  • 1tbsp Egg White (or aquafaba alternative)
  • 2 dashes Angostura Bitters
  • Soda Water to top (small splash)
  • Ice

Method

  1. Add Jumbuck Gin, finger lime, lemon juice, sugar syrup and egg white to a shaker.
  2. Dry shake (no ice) to create foam.
  3. Add ice and shake again until chilled.
  4. Strain into a chilled coupe or rocks glass.
  5. Add a small splash of soda water to lift the foam.
  6. Finish with 2 dashes of Angostura bitters on top.
